A Cook Islands travel is like discovering a heavenly sanctuary perfect for a secluded, quiet escape. Survivor Cook Islands Cook Islands is home to the thirteenth season of the hit reality television show Survivor Cook Islands—probably the most controversial leg—having earned very different reactions because for the first time in Survivor, the contestants were divided into tribes by race and ethnicity, when in previous seasons age and gender clusters are the factors. There were several new twists and first time events that occurred during this season. Survivor Cook Islands also gave birth to the first Asian-American castaway to win Survivor (Yul), the first season to have have a three person final tribal council, a contestant who earned zero votes in the Final Tribal Council (Becky) and the contestant to receive the largest number of cumulative votes in a single season (Jonathan with 15).

The Cook Islands are located in the South Pacific, about 1875 miles (3015 km) north east of Auckland. The Cooks' nearest neighbors are Tahiti to the east and American Samoa to the west, each roughly 1500km (930 miles) away. Aitutaki (filming location of Survivor Season 13) sits at one corner of a triangular lagoon dotted with lovely motu (small islands). Two of the four tribal camps were on Motu Rakau and Motu Rapota. Tribal Council was filmed near Vainamu, Arutanga on the main island of Aitutaki. Motukitiu was the location of Exile Island and Motu Maina was the overnight reward location. Challenges were filmed on Motu Akiami, which also hosted the eliminated contestants (known colloquially to some as the "Mutiny Motel" or "Loser's Lounge").

The high point of any visit to Aitutaki is a lagoon cruise. The motus which are mainly at the outer perimeter of the lagoon are wonderful landing places for the day cruises available for visitors. The air temperature is warm but clouds blow winds swiftly in and off by the sea. Here, almost everything consists of water and blue. Wherever you stand you have a view of the sea and sky. As you turn through 360 degrees, all the lines of the land and sea are parallel with the horizon where the sky meets the sea. The endless lagoon is a continually changing palette of blues, greens and grays and you see the ocean merging with the sky, stretching to the horizon.

Aitutaki is a magnificent and remote island, the kind of which dreams are made. It is a triangular-shaped 'almost'-atoll rising up 4000 metres from the floor of the Pacific Ocean. It consists of three volcanic and 12 coral islets (motus). Life on Aitutaki moves at a wonderfully relaxed tempo which is why it is such a popular destination for visitors who fly in from Rarotonga for day trips as well as extended stays. The lagoon can be approached in leisurely fashion in traditional outrigger canoes for quiet paddling just off the beach or in more sophisticated launches favored by foreign anglers. The place is perfect for picnics, walks across to the reef side of the island and some snorkelling in the channel at its north-eastern extremity. Diving is excellent and the fish plentiful in the best spots.

How to Cook an Egg

"How to Cook an Egg" was requested by one of my e-newsletter subscribers. Having been in the restaurant business for over 20 years, I was not surprised by the request. I have actually met chefs who could not properly cook an egg, let alone cook an over easy egg.

This request started me thinking about my egg cooking experiences.

High school home economics class was my only real experience before I was married and I guess that didn't sink in.

The only thing I remember about eggs in that class was making Egg ala Goldenrod (which I still love) and beating an egg and then measuring it in tablespoons for the purpose of making a recipe that required half an egg. I never, ever came across another recipe requiring half an egg.

And I never learned how to cook an egg.

So basically as a new (young) bride I had to start from scratch. I married a very finicky egg eater and after being scolded for imperfect over easy eggs, I began throwing eggs away if they weren't "just right."

I must have ended up throwing away dozens of eggs while perfecting my egg cooking skills. I thought I must be a slow learner. I just had to learn how to cook an egg! Had he known, my thrifty, finicky husband would have lectured me about wasting food. But as the words of the song "Margaritaville" say, I thought it was "his own darn fault." I never did reveal my secret.

Practice does make perfect, as it is said, and eventually I learned how to cook an egg.

After the death of my first husband (no, not my cooking), I married another wonderful man. I was pleased that I could cook perfect over easy eggs for him. Being the thoughtful man he is, he didn't mention for some time that he really preferred his eggs over hard.

Oh, the cruelties of life! I don't mind saying that it was very hard for me to break those yolks!

Vegetarian Lasagna Recipe
Lasagna Noodles
10 ounce Pk frozen chopped Broccoli
14 1/2 ounce Can Tomatoes
15 ounce Can Tomato Sauce
1 cup Chopped Celery
1 cup Chopped Onion
1 cup Chopped Grn/Sweet Red Pepper
1 1/2 teaspoon Dried Basil crushed *
Bay leaves
Clove garlic minnced
Beaten Egg
2 cup Lo-fat Ricotta or Cottage Ch
1/4 cup Grated Parmesan Cheese
1 cup Shredded Mozzarella Cheese

* or substitute 1/2 t dried Oregano for 1/2 t of the dried Basil Cook noodles and broccoli separately according to their package directions; drain well. Set aside.

For sauce, cut up canned tomatoes. In a large saucepan stir together undrained tomatoes, tomato sauce, celery, green or sweet red pepper, basil, bay leaves, and garlic. Bring to boiling; reduce heat. Simmer, uncover, 20-25 minutes or till sauce is thick, stirring occasionally.
Remove bay leaves.
Meanwhile, in a bowl stir together egg, ricotta cheese, parmesan cheese, and 1/4 t pepper. Stir in broccoli. Spread about 1/2 cup of the sauce in a 13x9x2" baking dish. Top with half the noodles, half of the broccoli mixture, and half of the remaining sauce.
Repeat layers, ending with the sauce.
Bake, uncovered, in a 350 deg F oven for 25 minutes; sprinkle with Mozzarella.
Bake 5 minutes more or till heated through. Let stand 10 minutes before serving.

Thrills, Spills, Cook Islands Paddling

The Vaka Eiva is a week long paddling festival held in Rarotonga, Cook Islands, each year in November. The week long event attracts many local and international paddlers. This year, teams from New Zealand, Hawaii, Tahiti and Australia competed with the Cook Islands for the 8 race events. This included the Masters Men and Women OC1,12km, Open Men and Women OC1,18km, Marsters Men and Woman V6,12km, Open Men and Women V6,18km, Masters and Open Mixed V6, 12km, Juniors V6,10km, Muri Beach 500m Sprints, and Men and Womens Open V6, Round Raro Relay.

This years festival has drawn a record field on some 530 paddlers and 61 teams. There were rough sea conditions with high swells which caused thrills and spills for several teams. A number of paddlers in both the open and masters races capsized in the choppy conditions. One mishap halfway around the island occurred when an open men’s paddler went crashing over the reef in the surf and smashed his canoe in half.

Australia came in first place for the Masters Men and Women’s race, and New Zealand won the Open Womens race while Hawaii won the Open Mens race. During the round Raro race, teams were able to use the huge swells to their advantage and surf some of the way, before facing strong headwinds on the western side of the island. Team Hawaii came in 1st in the mens Round Raro relay and Tahiti came in 1st for the women’s race. Everyone enjoyed the race events and they also enjoyed the Cook Islands Culture, vibrant nightlife, restaurants, beautiful beaches and relaxing atmosphere.

How to Cook Crab Legs

How to Cook Crab Legs

People assume that crab legs are difficult to prepare, but surprisingly crag legs are not difficult to prepare at all and can be prepared within minutes. But most likely, the frozen crab legs you have purchased at the local supermarket has already been cooked and all you need to do next is heat them up and it’ll be ready to eat. If you do plan on buying crab legs, try not to buy the ones that have been thawed. Why? Because they will lose their freshness so try to buy the frozen crab legs or pre-cooked ones. But no worries, they usually come pre-cooked anyways.

Boiling Fill a large saucepan with water and add a tablespoon of salt, boil the water and drop the crab legs in. let it heat up for around 10 minutes and remove the water and rinse the crab legs.

Baking Preheat your oven to 375°F and place the crab legs onto the baking tray. Brush the crab legs with butter, lemon juice and seasoning and leave in oven for 15 minutes. This is my favorite way to heat up crab legs.

Microwave Place the crab legs in the microwave with a microwave-safe dish and cover the crab legs with paper towels and heat high for 3 minutes.

Steaming Pour 3 cups of water in the steamer and add 1 tablespoon of salt and wait till it boils. After that, add the crab legs and let the crab steam for 10 minutes. You can serve them with lemon or seasoning for a better taste.

The shells of the crab legs are hard and cannot be broken using your teeth or hands. You must purchase pliers in order to crack the hard shells of the crab legs.

There you have it, four great ways to cook crab legs. My suggestion is try ever single way to cook crab legs so you can find your favorite way of cooking. My favorite is baking because I love seeing the legs brown and cooked. The taste is also great and refreshing. Nothing says love better than, mom's home cooking. I really never realized it as a kid, but since I've become a mother myself, and I cook alot, I do have a better appreciation of my mother's home cooking. It's not as easy as it looks,and cooking is very time consuming, which is why so many more people tend to eat out. We almost always had dinner between 5-6, and we almost always ate dinner together as a family. I think it's very important to eat dinner as a family and kind of discuss the event's of everyone's day, even in today's fast paced world, where everyone is to busy to stop and smell the roses.

My mom passed away quite a few year's ago, but I do try to carry on the tradition. I actually take her recipes, and kind of revamp them, by revamp I mean to shorten the recipe and still get the same results, just a little less time involved. It doesn't have to take hours and hours to make great food, but you can make it taste like it took hours to make it! I know everyones family has their own special recipes, we certainly do. Parmesan Cheese: Freshly ground Parmesan cheese is always a welcome addition to the top of any Italian dish even though it may not always be needed in the ingredients of the Italian recipe you are cooking. The famous cheese brand, Kraft, has a new product with a block of cheese in its container along with its grater. The price is not expensive and it works very well with Italian cooking.

Olive oil: One of the mistakes that many Italian food amateurs make is using pricey olive oil for things like pan-frying. Using the standard olive oil, which is yellow in colour is just fine for this.

Keep these ingredients well stocked and you will be ready and prepared to cook any Italian dish.

Not a single soul on this Earth will ever argue that Ernest Hemingway was a successful and prominent writer. With the lifestyle he used to lead I do not really hesitate he could easily manage with his breakfast. Could I do the same? In this era of fast life, parents may be busy with their scheduled task, so that they won't get sufficient time for educating their kids with food preparations. Finally the healthy lifestyle of home made food has given way to fast food restaurants and instant food. One should be aware of the health issues caused by those diets where harmful preservatives are used extensively. Such habits should be discouraged by practicing cooking at home. Kids should be reminded about the importance of a healthy diet and about the side effects of harmful junk food. This should be practiced from the early days of childhood so that they won't get too much attracted towards the eat outs.

Cooking with the kids is an excellent way to start this reform. Initially kids should be given the chance to observe the cooking process and the preparations needed for cooking. They will be able to appreciate the freshness of the ingredients used and they will watch with curiosity and interest how those ingredients are converted to amazing food preparations. It is my conviction that the whole span of our lives from conception on can be free from all ailments, barring accidents or external infections, if we carefully prepare our food so that the vital vitamins and minerals are retained

Below are some tasty supper dishes which can be prepared in such a way as to preserve the important nutrients and thus keep us healthy.

Quick Supper Dishes

Macaroni, Noodles And Spaghetti

1 lb. semolina type macaroni, noodles or spaghetti
4 cups hot, but not boiling, water
3 tablespoons coarse salt
2 tablespoons olive oil

A child's favorite. Fixed "al dente" it can provide much of the vitamins and minerals required for protection of body needs for growth and function.

Place the noodles, spaghetti or macaroni into hot water with salt and oil, and let stand for about five minutes.

Quick Supper Dishes Italian Spaghetti

1/2 lb. semolina type spaghetti, Italian type excellent
2 cups very hot water
2 teaspoons coarse salt and
fresh red pepper
6 tomatoes, liquefied
1 chopped onion or
1 scallion
1 diced green pepper
1 stalk celery with leaves, chopped
1 clove garlic

The vegetables enrich this dish with their respective vitamins and minerals especially Vitamin C in tomatoes.

Prepare the spaghetti as indicated in recipe for spaghetti. Sear quickly over high heat on film of oil, tomatoes, garlic clove, onion, pepper and celery. Add the seasonings and olive oil. Meat balls may be added.

Spaghetti With Chicken

1 fresh young broiler, cut at each joint
3 teaspoons peanut, corn or olive oil Dash oregano Basil leaves
2 cloves garlic, minced
Coarse salt and crushed red pepper as desired

A fun and protein combo.

Quick Supper Dishes

Prepare the spaghetti as indicated in recipe above. Heat pan containing a film of oil and the garlic. Remove garlic when it is browned and saute the chicken which will be seasoned later with salt, pepper, oregano and basil leaves. Turn them over in 3 minutes and leave for another 2 minutes. Cover and remove from fire and serve immediately.

Noodle Chop Suey

1 pkg. noodles
1 chopped onion or scallion
1 green pepper, chopped
2 stalks celery with leaves, chopped
1 cup chopped fresh mushrooms
3 tablespoons olive oil
2 fresh tomatoes, mashed
2 teaspoons cornmeal Dash oregano Basil leaf Bay leaf
Coarse salt and crushed red pepper

Saute the vegetables over high flame (1 minute). Add the cornmeal. Remove from flame and add the mushrooms. Place the noodles, which are already prepared in manner described in first recipe, with the vegetables and serve.

All these dishes are not only satisfying but healthy. Enjoy!

It would not take much to get a $5000 fine. We are not talking about cooperation on only major crimes. Such information requests can be granted on purely taxation matters and includes acts or omissions. It would also appear that if you received funds or sent funds to an entity that was guilty of something and being investigated in some country and this country could request your records because your name or your corporation, trust etc came up in the investigation of some other entity that may have done something wrong. This is a fishing expedition and safeguards against this sort of practice do not seem to be in place at all in the Cook Islands. Once your records are in the hands of another government no matter whom this government may be, this government may insert your records into another court file or somehow get it into the public domain for the world to see. This is not a jurisdiction one would want to rely on for privacy or asset protection.

Cook Islands Corporation - The Cook Islands does have bearer share corporations but the bearer share certificates must be held by an approved custodian in the Cook Islands. This means the shares need to be made out to someone. Transfers of the shares would involve reportage and identifying the new owner. This sort of defeats the purpose of the bearer shares since the anonymity is gone. The Cook Islands also has a requirement to keep accounting records for corporations.
